Easy Mixed Berry Fro-Yo Granola Bites
It's no secret that I don't really consider myself to be a super fabulous chef, but I do enjoy being in the kitchen and trying new recipes.
A favorite part of my day job (working for the Omaha World-Herald) is doing just that -- testing out recipes to put in future issues of Momaha Magazine. I figure that if it's something I can make, then literally anyone can make it.
My process basically consists of finding a recipe I like on Pinterest or in a cook book sent to the newsroom that fits the theme or season of the issue, make it, modify it, taste-test it, photograph it, share it.
So simple and so fun. My next goal is to try to make a video of me doing such things. It would be hilarious.

WHAT YOU NEED
- 1 bag honey granola crumbles
- Mixed Berry yogurt
- Fresh berries -- blueberries, raspberries, blackberries
- Mini muffin tin
- Mini muffin liners
WHAT YOU DO
1. Place a liner in each cup of the mini muffin tin. 2. Drop 1-2 tablespoons of granola crumbles into the lined muffin-tin cups -- just enough to cover the bottom. 3. Add yogurt to each cup, spreading lightly so the granola in the cup is fully covered. Fill until cups are 3/4 full. TIP: Use a plastic piping bag for mess-free filling. 4. Top each cup with one, two or three fresh berries. 5. Freeze until yogurt is firm, about 1-3 hours. Store in a zip-top freezer bag for easy grab-and-go access.
